Pina Colada Cake


One of the things I have missed the most from Greece since living here in the UK for the last 2 years is the full 3 months of summer holidays my children would have. British schools close for a mere 6 weeks, whereas in Greece school is out mid June, until mid September! I feel blessed to have been able to spend all their primary school summers on our tiny little island of Kasos. 
My children literally hate me-cannot say I blame them, I sort of hate myself too-for cutting their holidays SO short and this month especially is very difficult for all of us. We are all on autopilot, just waiting for it to end, so that we can get on a plane and spend what is left of the summer on our island.

Each year, before departing from Athens to Kasos, I would clean out the pantry and as we would travel to our remote island by boat-16 hours to get there with the fast route, 24 with the slow one-I would load the car with all the forgotten goods I neglected to use during the winter. The year I created this cake, it was pineapple and exotic galore: the pantry was fully stocked with pineapple cans in all varieties, tons of desiccated coconut and one too many coconut milk cans. I could of course find all of the above on the islands mini-markets, even coconut milk could be finally found at my friends store at this time, but I HAD to clean everything out!

Κάθε χρόνο πριν φύγω για τον νησί μου, την Κάσο, αδειάζω τα ντουλάπια της κουζίνας και κουβαλάω εκεί μαζί μου διάφορα τρόφιμα που στέκουν εκεί ξεχασμένα. Αυτή την φορά, βρέθηκα με το ντουλάπι της Κάσου γεμάτο κονσέρβες με ανανά-όλων των ειδών: σε σιρόπι, σε χυμό, κομμένο σε κομματάκια, ολόκληρο-πολλά σακουλάκια με τριμμένη καρύδα και κονσέρβες με γάλα καρύδας. Όλα τα παραπάνω τα βρίσκω και στο νησί βέβαια, ακόμα και το γάλα καρύδας-το φέρνει ο φίλος μου ο Ηλίας στο μαγαζί του-αλλά το ντουλάπι έπρεπε να αδειάσει!


Once settled on the island, on a day of a huge family get-together, I started considering my recipe options for the 'pineapple & exotic galore' pantry treasure. I decided they had to be put together in a cake. I had no idea what specific cake I wanted to make, so I surfed the internet. I came across 2-3 drool worthy recipes and decided to compose them into 1, as each one contained an element I liked that another was lacking. Hence the Pina Colada or Exotic Tres Leches Cake was born! 

It is a refreshing pineapple, coconut milk and rum cake, drenched in 3 milk mixture: coconut, condensed and sweetened condensed milk, to which I added cardamom seeds at the last minute, that elevated its flavour to another level!

Σκεπτόμενη τι γλυκό θα φτιάξω μια μέρα που είχα τραπέζι οικογενειακό με ανηψάκια, ξαδερφάκια, θείες ξαδέρφες κι αγαπημένους φίλους λοιπόν, αποφάσισα να ενώσω αυτά τα τρία υλικά σε ένα κέικ. Πως; Ιδέα δεν είχα, οπότε άρχισα να ψάχνω το διαδίκτυο. Αφού βρήκα 2-3 συνταγές που έκαναν τα σάλια μου να τρέξουν, αποφάσισα να τις ενώσω, γιατί η κάθε μια είχε κάτι που έλειπε από την άλλη, κι έτσι γεννήθηκε αυτό το γλυκό κόλαση!
Δροσερό κέικ με ανανά, ρούμι και γάλα καρύδας, 'σιροπιασμένο' με τρία γάλατα-καρύδας, εβαπορέ και ζαχαρούχο. Μια προσθήκη της τελευταίας στιγμής ήταν το κάρδαμο ή κακουλέ, που έδωσε μια άλλη διάσταση στην γεύση όλου του γλυκού.


It was instantly a family favourite and was devoured within half a day. It has been on popular demand ever since and lets just say I had to soon re-stock ingredients, as I made it more than 10 times that summer. 
It is easy to make, but you need to plan ahead, as it need to be refrigerated for at least 3 hours, so plan ahead. 

The flavour of this cake has now become a reminder of that summer I first made it-summer 2015-I still make it every year and we still devour it like the first time we had it. I can't wait to make it again. this year on my beloved island, for a get together with all the friends and family I have missed so much!

Τα παιδιά το λάτρεψαν-ας μην κάνουμε θέμα το λίγο ρούμι που έχει το 'σιρόπι'-κι οι μεγάλοι το ίδιο. Φαγώθηκε όλο μέσα σε μισή μέρα, και από τότε ακούω παρακάλια για να το ξαναφτιάξω!
Δεν θέλει κόπο, αλλά θέλει χρόνο-μένει στο ψυγείο για 3 ώρες μίνιμουμ αφού το σιροπιάσετε-οπότε...plan ahead. Η διαδικασία του όμως είναι εύκολη, και το αποτέλεσμα αξίζει πραγματικά!
Εχθές επιστρέψαμε από το νησί, και συζητώντας με τα παιδιά μου για το πόσο θα μας λείψει, για κάποιο λόγο το μυαλό μου, όλο και γυρνούσε σε αυτό το γλυκό.

Μετά κατάλαβα πως ασυναίσθητα συνδύασα την γεύση του με το φετινό καλοκαίρι, γιατί φαγώθηκε με πολλή χαρά από πολύ αγαπημένους μου ανθρώπους...
Και του χρόνου να είμαστε καλά, όλο και περισσότεροι, στο νησί της καρδιάς μας!






IGREDIENTS:
  • 6 eggs
  • 1 cup caster sugar
  • 1/2 cup coconut milk
  • 1 and 1/2 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract or 2 sachets ov vanilla powder
  • 3 tbs white rum
  • 1 cup pineapple chunks in juice
  • 10 pods of cardamom or 1/2 tsp of ground cardamom
FOR THE 3 MILK MIX:
  • 3/4 cup coconut milk-one can of about 400ml is enough to use for the cake and 3 milk mix
  • 1/2 cup condensed milk
  • 1/2 cup sweetened condensed milk
  • 1 tbs white rum
FOR THE TOPPING:
  • 250ml of whipping cream
  • 1 tbs caster sugar
  • 1 and 1/2 cup desiccated coconut or coconut chips
  • pineapple slices-fresh or canned

ΥΛΙΚΑ:
  • 6 αυγά
  • 1 κούπα ζάχαρη 
  • 1/2 κούπα γάλα καρύδας 
  • 1 και 1/2 κούπα αλεύρι 
  • 1 κς μπέικιν
  • 1/2 κγ αλάτι 
  • 2 βανίλιες ή 1 κγ εκχύλισμα βανίλιας
  • 3 κς Ρούμι 
  • 1 κούπα ανανά κονσέρβας κομμένο σε μικρά κομμάτια-σε χυμό κατά προτίμηση, κι όχι σιρόπι.
  • 10 περίπου κακουλέ ολόκληρα
Για το 'σιρόπι' 
  • 3/4 κούπας γάλα καρύδας-(μια κονσέρβα 400ml αρκεί για όλο το γλύκο)
  • 1/2 κούπα ζαχαρούχο γάλα
  • 1/2 κούπα γάλα εβαπορέ
  • 1 κς Ρούμι
Για γαρνίρισμα: 
  • 1 κρέμα γάλακτος 250 ml περίπου
  • 1 κς ζάχαρη 
  • 1 και 1/2 κούπα τριμμένη καρύδα ή τσιπς καρύδας (τα βρίσκετε στα βιολογικά καταστήματα) 
  • Φέτες ανανά από κονσέρβα ή φρέσκο.


RECIPE:
  1. Preheat your oven to 180 degrees Celsius. Grease and slightly dust with flour a large, deep rectangular oven dish. 
  2. Crush the cardamom pods and remove the seeds. Crush those as well with a mortar and pestle, or if you don't have one, by wrapping them in a towel and rolling a heavy object on them.
  3. Put all dry ingredients together in a bowl-flour, baking powder, salt and cardamom-and mic well.
  4. Place the eggs and sugar in the mixer bowl, and mix on high speed, until they are well combined and the mixture whitens-for 5-8 minutes.
  5. Lowering the mixer speed, add the vanilla extract, coconut milk and rum. Mix until just incorporated-do not over-mix.
  6. Add the flour mixture, again mixing until just incorporated! Add half the pineapple chunks as well, and mix gently. 
  7. Place the mixture in the oiled and dusted pan. Add the rest of the pineapple chunks-try to spread them evenly on the surface of the batter.
  8. Bake for 30 minutes. The cake is done when the surface turns slightly rosy. Remove from the oven and let cool completely.
  9. Whilst it cools off, line a baking tray with baking paper and spread the desiccated coconut on that. place in the oven-180 Celsius-for 4 to 6 minutes, until slightly toasted. When ready, set aside to cool off.
  10. Pierce the cake-should be room temp-with a wooden skewer or a fork. Holes should go all the way down the cake, and all over its surface evenly. 
  11. Mix the 3 milks and the rum in a bowl and pour over the top of the cake. Wrap the whole thing in cling film, and place in the refrigerator for at least 2 hours up to overnight. 
  12. Whip the cream and sugar together until it turns to a fluffy whipped cream, 5-6 minutes.
  13. Spread cream all over the cakes surface and add the coconut and slices of pineapple to garnish. Make sure you have dried the pineapple with kitchen paper as well as possible.
  14. Slice into squares and enjoy! If you happen to have leftovers, keep refrigerated.

ΟΔΗΓΙΕΣ:
  1. Προθερμάνετε τον φούρνο στους 180 βαθμούς Κελσίου. Λαδώστε και αλευρώστε ένα παραλληλόγραμμο πυρέξ μεγάλο.
  2. Σπάστε τα κακουλέ και βγάλτε τα σποράκια τους. Λιώστε τα με ένα γουδί ή χτυπώντας τα με κάτι βαρύ-ένα ποτήρι-αφού τα 'κλείσετε' μέσα σε μια πετσέτα. 
  3. Σε ένα μπολ, ενώστε το αλεύρι, το μπέικιν, το κακουλέ και το αλάτι, κι ανακατέψτε τα καλά.
  4. Στο μπολ του μίξερ, τοποθετείστε τα αυγά με την ζάχαρη και χτυπήστε τα σε μεγάλη ταχύτητα, μέχρι να φουσκώσουν πολύ και να ασπρίσουν αρκετά, 5-8 λεπτά. 
  5. Προσθέστε την βανίλια, το γάλα καρύδας και το ρούμι κι ανακατέψτε σε χαμηλή ταχύτητα μέχρι μόλις να ενσωματωθούν. 
  6. Προσθέστε το μείγμα του αλευριού, χτυπήστε ελάχιστα να ενωθούν τα υλικά, προσθέστε και τον μισό κομμένο ανανά, και τοποθετήστε στο πυρέξ. 
  7. Ρίξτε από πάνω τα υπόλοιπα κομμάτια ανανά, και βάλτε το κέικ στον φούρνο για 30 λεπτά. Είναι έτοιμο όταν ροδίσει ελαφρά. 
  8. Βγάλτε από τον φούρνο, κι αφήστε το να κρυώσει εντελώς. 
  9. Σε αυτο το διάστημα, τοποθετείστε την τριμμένη καρύδα σε ταψί στρωμένο με αντικολλητικό χαρτί ψησίματος, και βάλτε την στον φούρνο στους 180 για 4-6 λεπτά να καρβουντιστεί. Αφήστε την στην άκρη.
  10. Όταν κρυώσει το κέικ, τρυπήστε το σε τακτά διαστήματα μέχρι κάτω με ένα ξυλάκι για σουβλάκι ή ένα πιρούνι. Ενώστε τα τρία γάλατα μαζί σε ένα μπολ, προσθέστε το ρούμι κι ανακατέψτε. 
  11. Περιχύστε όλο το κέικ με τα γάλατα, και κλείστε το καλά με μεμβράνη. Τοποθετείστε το στο ψυγείο για 2 τουλάχιστον ώρες. Μπορείτε να το αφήσετε κι όλη νύχτα. 
  12. Όταν είναι έτοιμο, χτυπήστε την κρύα κρέμα γάλακτος με την ζάχαρη για 5-6 λεπτά, μέχρι να γίνει μια απαλή σαντιγί.
  13. Απλώστε την πάνω σε όλη την επιφάνεια του κέικ, προσθέστε την τριμμένη καρύδα και από μισή φέτα ανανά-που έχετε βγάλει από την κονσέρβα και έχει στραγγίξει καλά-σε κάθε κομμάτι. 
  14. Κόψτε σε μεγάλα τετράγωνα κομμάτια, και σερβίρετε. Εάν περισσέψει κάποιο κομμάτι, τοποθετείστε το στο ψυγείο.
